With this course, we have prepared a monthly course of seasonal, Nagato-sourced ingredients with a “Philosophy of Sando Cuisine,” meaning to eat locally-sourced ingredients, prepared with local methods, in the area from which they are sourced.

Each day, we work to prepare the best dining experience for our guests, and our chefs pour their hearts into each dish. We invite you to enjoy this culinary hospitality, presented by our head chef.

This full course is bursting with the flavors of Japanese Black wagyu beef sirloin and fillets , further filled with the deliciousness of fresh abalone (8 dishes in total). With savory aromas and colors, these steaming hot dishes will make your mouth water. Enjoy a memorable dinner here with both the illumination of the garden, and the chef’s hospitality.

This quality course dinner includes Japanese Black wagyu beef (sirloin steak & fillets), as well as Japanese spiny lobster, and fresh fish that will light up your table with luxury. After tasting seasonal ingredients with appetizers, the course continues with flavorful spiny lobster, and with Japanese Black wagyu beef: tender sirloin and flavorful fillets. With this course, you can enjoy both a conversation with the chef as the meal is prepared, and the unique savory tastes of the ingredients. Have your fill of this unique teppanyaki experience. (Depending on availability, Japanese spiny lobster may be replaced with lobster)

Select either a sirloin or filet of Japanese black wagyu, depending on how you feel that day. This superb dinner course (9 dishes in all) includes lavish seafood ingredients like Japanese spiny lobster, tiger puffer fish from Nagato, abalone, and more. The Nagato tiger puffer fish is served thinly sliced, prepared in a salad with other local seafood. Seafood dishes include spiny lobster and abalone, each served with its own special sauce. Guests can enjoy these together with the chef’s wonderful teppan skills, which bring out all the delicious flavors of the original ingredients. (Depending on availability, Japanese spiny lobster may be replaced with lobster.)

This course is of 9 dishes in all. In addition to your choice of either Japanese black cattle wagyu sirloin or filet, with this course, the manager hopes to allow visitors to savor some of the finest quality local seafood and Japanese spiny lobster. For this reason, this course is offered only during the limited months when these natural ingredients are available. Savor some of the most luxurious seafood ingredients in Yamaguchi, including Nagato tiger puffer fish and wild abalone, tiger puffer fish roe, and more. (Depending on availability, Japanese spiny lobster may be replaced with lobster.)

This Otani Sanso original kaiseki course (with a total of 6 dishes and about 10 skewers of yakitori chicken) includes Nagato City’s famous yakitori and seasonal dishes. Enjoy grilled yakitori made with local Yamaguchi Prefecture chicken breeds, such as the Choshu-kuro-kashiwa, or the Choshu-kashiwa, whose feed is mixed with herbs; or savor a wagyu fillet.
Enjoy the combination of the fresh ingredients from land and sea in the Japanese dishes, together with the yakitori, carefully grilled and skewered to perfection by the chef.
