Our bakery shop sells bread made by scratch in Otani Sanso, where we oversee the entire process,
from making dough from flour, to lining up the bread in our storefront.
Our homemade bread is baked with a special overnight production method
(allowing it to rise by baking it at low temperatures for a long period of time),
giving it not only a delicious flavor, but making it longer lasting. Free of trans-fats.
Salt is such a vital ingredient in dough-making, and we use mineral-rich "Hyakusho Salt" ("Farmer's Salt") taken from the ocean in Nagato.
